INGREDIENTS FOR THE SALAD

  • 2 cups mixed salad greens (such as lettuce, spinach and/or arugula)
  • 1 cup Cherry tomato, halved
  • 1/2 cucumber, diced
  • 1 bell pepper, thinly sliced (any colors)
  • 1/2 red onion, thinly sliced
  • 1 carrot, grated

Additional Options

  • 1/2 cup feta cheese or goat cheese (for garnish)
  • 1/4 cup capers
  • 1/4 cup fresh herbs (such as parsley or basil), chopped
  • 1/4 cup cabbage, shredded
  • 1/2 cup grilled chicken, shredded

INGREDIENTS FOR THE VINAIGRETTE

Additional Options:

  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • 1 teaspoon honey or maple syrup (optional, for sweetness)
  • Pinch of salt and a few cracks of fresh pepper 

INSTRUCTIONS

PREP SALAD GREENS

  1. Wash the vegetables and mixed salad greens thoroughly and pat them dry using a clean kitchen towel or salad spinner
  2. Tear the greens into bite-sized pieces and place them in a large salad bowl
  3. Halve the cherry tomatoes
  4. Dice the cucumber into bite-sized pieces
  5. Thinly slice the bell peppers
  6. Thinly slice the red onion
  7. Shred the carrots using a grater
  8. Chop the fresh herbs of your choice
  9. Mix all the veggies together

ASSEMBLE

  1. In a small bowl, whisk together the extra virgin olive oil, Peppers & Pickles hot sauce, and if using, Dijon mustard, minced garlic, honey or maple syrup and S&P. Continue whisking until the dressing emulsifies and thickens slightly.
  2. Pour the homemade vinaigrette over the mixed vegetables.
  3. Toss the salad gently, ensuring the dressing coats all the ingredients.

Optional: Garnish with cheese: 
If desired, sprinkle crumbled feta cheese or goat cheese over the salad as a delicious finishing touch.
