INGREDIENTS FOR THE SALAD
- 2 cups mixed salad greens (such as lettuce, spinach and/or arugula)
- 1 cup Cherry tomato, halved
- 1/2 cucumber, diced
- 1 bell pepper, thinly sliced (any colors)
- 1/2 red onion, thinly sliced
- 1 carrot, grated
Additional Options
- 1/2 cup feta cheese or goat cheese (for garnish)
- 1/4 cup capers
- 1/4 cup fresh herbs (such as parsley or basil), chopped
- 1/4 cup cabbage, shredded
- 1/2 cup grilled chicken, shredded
INGREDIENTS FOR THE VINAIGRETTE
- 1/4 cup extra virgin olive oil
- 2-4 tablespoons Peppers & Pickles Hot Sauce
Additional Options:
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1 teaspoon honey or maple syrup (optional, for sweetness)
- Pinch of salt and a few cracks of fresh pepper
INSTRUCTIONS
- Wash the vegetables and mixed salad greens thoroughly and pat them dry using a clean kitchen towel or salad spinner
- Tear the greens into bite-sized pieces and place them in a large salad bowl
- Halve the cherry tomatoes
- Dice the cucumber into bite-sized pieces
- Thinly slice the bell peppers
- Thinly slice the red onion
- Shred the carrots using a grater
- Chop the fresh herbs of your choice
- Mix all the veggies together
- In a small bowl, whisk together the extra virgin olive oil, Peppers & Pickles hot sauce, and if using, Dijon mustard, minced garlic, honey or maple syrup and S&P. Continue whisking until the dressing emulsifies and thickens slightly.
